Crunchy Oatmeal Cookies

The recipes from my mum’s cook book seem to be quite popular, so here’s another one. These cookies have been a hit with the kids and again are quick and easy to put together. I halved the batch the first time I made them and they went in 5 mins flat! This time I was sure to make the whole batch.

You can add nuts and/or sultanas for a bit of texture but they are crunchy and delicious as is and my kids are fussy so I did mine without. Hubby took some to work and they were quickly devoured. I have enjoyed making snacks from scratch for the kids, they have got to be better for them than some of the supermarket alternatives. Enjoy!

Crunchy Oatmeal Cookies

Ingredients

2 cups oats                            3/4 teaspoons bi-carb soda

2 cups flour                           2 teaspoons nutmeg

2 cups sugar                           1 teaspoon baking powder

1 teaspoon salt                       3 eggs

1 cup butter                             2 teaspoon cinnamon

Method

Stir all dry ingredients together, work in butter, (melted also works well if in a hurry). Lightly beat eggs and combine with other ingredients, add nuts and sultanas if you wish. Make into balls and place on a baking tray lined with baking paper. Cook at 190 degrees for around 10 mins. Makes lots!
