What a gorgeous spring day it is in Perth today. A great end to a particularly wet and windy week. This beautiful weather makes me want to get outdoors and enjoy the sunshine!
What better way to spend a georgeous Sunday, (long weekend to boot!) than inviting some friends round and whiping up some pretty canapes?
I made these a couple of weeks ago for some friends and they went down a treat. When I saw the price of canape cups in the supermarket, I decided to make my own. They turned out really great, I’m so clever, he he! You can put what ever filling in them you like. I chose Ceaser and Bruchetta. Give them a try!
Mountain bread wraps cut into circles using a cookie cutter. Keep the bread in a stack to cut as many as possible at once. Spray a mini muffin pan with some oil and push the circles of bread into the pan, one at a time. whack in the oven at about 180 degrees for around 5 mins. Keep and eye on them, they crisp up quickly. They also cool really quickly so you can fill them almost straight away.
A couple of boiled eggs, (6-8 mins in a pot of boiling water) chopped into pieces. I would have used quail eggs if I could get my hands on them, their dainty size would be perfect, they would only need about 3 mins to boil.
Cos lettuce, torn into small pieces.
Eye bacon, lightly fried and sliced into strips.
Ceaser dressing, (mine was from the supermarket).
Place the lettuce in the cup, then the egg, top with 2 slices of bacon and a dollop of dressing. Delicious!
In a bowl, place 3-4 tomatoes diced small, 5-6 basil leaves torn into small pieces, half a red onion finely diced, a decent glug of olive oil, a good splash of a good balsamic vinegar or glaze and salt and pepper to taste.
Mix together and adjust seasonings to taste. Spoon into the cups and top with smaller basil leaves. Fresh and yummy!
