Perfect Pikelets

The school holidays present many problems. Temporary insanity in mums, and kitchen pantries being stripped bare! These pikelets are delicious and will fill the rugrats up, hopefully. Quick and easy to whip up when tummies are rumbling.

Perfect Picklets

The finished product


1 cup self-raising flour

1 egg

3/4 cup full cream milk

3 tablespoons caster sugar

Small amount of butter to lubricate the frying pan


Put all ingredients into a  large plastic mixing bowl. Mix with a whisk until well combined and smooth.

Put a large frying pan on medium heat and melt a little butter in the pan.

When butter starts to bubble, drop a tablespoon of mixture into the pan. Place as many in as your pan allows.

When you start to see bubbles appear in the picklets, it is time to flip. Leave for a minute or so then remove from pan. Adjust the pan temperature if necessary.

Repeat until mixture is gone. This batch should make around 20 picklets.

I have topped mine with mango flavoured, greek yogurt and strawberries. My daughter and her friend really enjoyed them.

    I always add a splash of vanilla to my picklets and enjoy them best with maple syrup – Yum!
